Is there any diet issues that I would need to know about? I have no idea what type of diet she is on right now.
The only thing that comes to mind is that they need a low fat diet. A pellet based diet with fresh and cooked foods should be fine, with seeds as treats or a small addition to the diet.
What size cage would she need? I am not sure if the cage will come with her or not.
A minimum sized cage I'd recommend 32x23, but larger if you can.
Toys.. are there any certain types that would be better?
Most cockatoos love to chew! So wooden toys would be a bonus! If her current owners know what she likes, then find out and see what her preferences are.
Also hepa filters? I have 2 macaws and a grey, would I need more than one?
If you already have one, then that may be fine, although having two dusty birds, you would need to check the filter more often.
And if you have any specific questions that I should ask prior to making a final decision.
Find out her current diet, likes, dislikes, quirks, and also, if available, vet records! Can't think of anything else off-hand.

1) Galah’s are prone to obesity, and like already said, need a low fat diet. Bubby’s diet is pellets, a variety mix, birdie bread, vegetables (fresh & cooked) lentils, grains, fruit, mash (sweet potato and pumpkin) and sprouted seed.
2) Bubby’s cage is 160h x 94 x 64 cm - here is a photo of his set-up: http://i55.tinypic.com/fz7xid.png
3) Bubby has a variety of different toys, chewing toys, rope toys (with knots), a big cat ball with finger traps. You can see most of his toys in the link I posted above with his set-up.
I am not sure about the hepa filter question, but I think an extra would probably be better, just so it makes it that extra bit cleaner/ air clearer. Monica answered your last question perfect, they are definitely questions I would be asking!
